This is my current FAVORITE meal! I've made it two weeks in a row and cannot wait to make it again. It's super easy and so delicious- I just smile and moan the whole time I'm eating it :)
Thai Tofu Lemongrass and Basil Curry
1 pound extra firm tofu (I like the sprouted kind, but it's not essential) cut into slices
enough cornstarch to coat the tofu slices
enough olive oil or canola oil to generously coat the bottom of your pan
salt and pepper to taste
1 head of broccoli cut into florets
1 zucchini chopped into 1/2 inch chunks
1 carrot sliced
1 pouch of lemongrass basil curry sauce (The sauce that I LOVEEEE is from Whole Foods in the Asian section. It's a white pouch and it's only 2.99 and it's delicious)
hot cooked brown rice to serve
sriracha hot sauce (optional)
*Coat your tofu slices in the cornstarch and fry in the hot oil until crispy- salt generously as soon as it comes out of the oil and cut into chunks
* Saute with vegetables until nearly done, then add the sauce pouch and bring to a simmer until the vegetables are tender
* To serve, I fill the bottom of a bowl with brown rice, top it with some of the tofu chunks and then pour the vegetables and sauce over the top. I like to add a little sriracha hot sauce on top!
