Watermelon and Avocados
Happy Summer Solstice!
I'll be celebrating (after Matti goes to bed) by contemplating all the things I want to achieve and accomplish during the rest of 2013 (health and simplifying) and what things I want to leave behind (negativity and sloth). I took a step towards simplicity and cleaned out my fridge and freezer throwing away all of the "unknowns" and the "why'd I put that in the freezer anyways" things. I'm already reaping the benefits since I found a tupperware of oreo cookie crumbs and am having a naughty little snack right now. Yay!
Anyways, with summer in full swing now, I could really care less what I'm wearing! A swimsuit, a pair of shorts and a breezy white hippie dress have been my staples lately. One thing that IS on my mind however (when is it not?) is FOOD! All I want to eat is watermelon and avocados and goat cheese pizza all the live long day!
Here is my Menu plan for the last days of sunny June.
Sunday- Jalapeno Goat Cheese Pizza, Avocado Pea Salad with Ranch
Monday- Miso Soup, Avocado Cucumber Brown Rice Sushi Rolls and sesame green salad
Tuesday- Zucchini (from my garden!) and goat cheese omelet and a spinach smoothie
Wednesday- Taco Salad with guacamole and crispy roasted black beans
Thursday- Chopped Salad with hard boiled eggs (one of my favorite summer foods!) and homemade brown mustard and lemon vinaigrette
Friday- Repeat of Sunday! Jalapeno Goat Cheese Pizza, Avocado Pea Salad with Ranch
Saturday- Repeat of Wednesday! Taco Salad with guacamole and crispy roasted black beans
Sunday- Crockpot Pinto Beans with avocado and lime and Vegan Cornbread
I will, of course, be eating copious amounts of watermelon for snacks as it's on sale this week for 6lb for $.99! Avocados are on sale for 6 for $.99 so that's why we have SO much of it in the menu plan for this week.
